Fool Proof Recipe: Ayam/Ikan Percik Kelantan from AzieKitchen

This is my second attempt trying this recipe. The first time kinda x jadi. Mayb because I use kunyit dah lama. Tak perap pastu terlebih halia. So kacau sangat rasa percik time tu.


Kali ni buat betul2. Ade la sikit durhaka sebab kunyit xde. Letak serbuk kunyit. Ternyata sedappp! I guess the main thing is to marinade the meat long enough and constantly stir the percik in medium heat until it thick enough to your liking.

Ayam Percik Kelantan

Bahan bahan:
1 ekor ayam - potong 4 I use 2 kembung and 1/4 ayam. Biasala conflict of interest

Bahan Perap:
5 ulas bawang merah
3 ulas bawang putih
1 inci halia
Garam secukupnya

Bahan Kuah:
2 pek santan pekat
10 ulas bawang merah
1 inci halia
1 batang serai
3 tangkai cili kering - boleh lebih jika suka pedas
Garam secukupnya
Gula - kena ada rasa manis
1/4 keping asam keping - letak sekejap dan dikeluarkan takut terlebih masam

Cara cara:

Kisar bahan perap sehingga halus dan perap pada ayam dalam 30 minit. Me just tumbuk je

Bakar ayam sehingga separuh masak. 

Kisar semua bahan kuah dan masakkan atas dapur dengan api perlahan sambil terus dikacau. Masak sehingga kuah pekat. Masukkan garam dan gula. Sesuaikan rasa dan bolehlah diangkat.

Apabila ayam mulai sedikit garing, lumur bahan kuah merata rata dan bakar seketika. Terbalikkan ayam dan dilumur bahan kuah lagi secara berulang ulang di kedua dua belah.

Bolehlah diangkat untuk dihidangkan. 

The taste sama macam Mama buat tapi Mama punya resepi simpler. Xde perap pun but bakar guna arang la. Tu yang lg sedap tuh, As for now, gune pemanggang ajaib sajalah :P

Fool Proof Recipe: Red Velvet Cake from Hana

I fell in love with RVC when Dyan brought it at office 5 years ago. It was a hit during that time and I still do now but geezz cake couldnt fly from Shah Alam ;( (found several RVC sold in Kerteh but get disappointed)

So I googled recipe and get hooked up with Hana's.  Been using hers fo numerous times and get credits too. Gotta thank her for sharing. It was easy and super moist!


I agree to reduce the sugar from cream cheese. Half cup of sugar is just too sweet. Not much of adjustment make but for my own note, I use all the standard metric measurement.


RESEPI KEK RED VELVET MOIST

Bahan-bahan
  • *2 cawan tepung kek/superfine
  • *2 sudu besar serbuk koko
  • *1 sudu kecil baking powder
  • *1 sudu kecil soda bicarbonat
  • *1 sudu kecil garam
  • 1 cawan buttermilk - resepi di bawah
  • 1 cawan gula halus
  • 1 sudu besar pewarna merah
  • 1 cawan minyak masak
  • 1/2 cawan air panas + 2 sudu besar lagi
  • 2 biji telur A
  • esen vanila

Topping
  • 250g cream cheese @ satu ketul
  • 1/2 cawan whipping cream
  • 1/4 cawan gula +2sb 
  • 1 sudu besar jus perahan lemon
I found out half of these will make do for one cake, unless you are soo rajin to cut the cake and place it in between :)

Cara-cara
  • Sediakan buttermilk - Campurkan 1 cawan  susu segar/susu cair dengan 1 sudu besar cuka apple cider atau cuka putih. Biarkan sebentar lebih kurang 10minit. Boleh juga guna yogurt sukatannya ialah 3/4cawan yogurt plain/original + 1/4 susu segar. (Today I use 1/2cup greek yogurt and 1/2cup fresh milk. Still works! More moist than using the milk+vinegar)
  • Satukan bahan yang bertanda * ke dalam mangkuk. Ketepikan.
  • Mangkuk lain, satukan gula, minyak dan juga telur. Pukul hingga kembang. Masukkan buttermilk, pewarna merah dan esen vanila. Pukul lagi. Masukkan bahan yang telah diayak tadi sedikit demi sedikit sambil putar perlahan hingga semua sebati. Akhir sekali masukkan air panas dan gaul sebati.
  • Lengserkan loyang dengan butter dan tepung, tuang adunan dan bakar 45minit. Kek ini boleh juga dikukus. I bake at 170degree for 50min.
  • Sementara menunggu kek masak, sediakan topping. Putar semua bahan sehingga sebati kemudian sapu pada kek. Sejukkan dahulu baru potong dan hidang.

The batter will turn watery than usual cake but that is how it was suppose to be. For me, if choc cake best served while it is warm, this RVC is best served chill.
